Skinny Sweet Potato Pie

Ingredients
1 large yam or sweet potato (approx. 3/4 lb.)
1 cup Splenda® Granular
2 tsp. vanilla extract
1/2 tsp. ground nutmeg (or 1/4 tsp. freshly grated)
1/4 cup Benecol® Spread
1/4 cup Egg Substitute (such as Egg Beaters)
2 tbl. flour
1/4 tsp. baking powder
1 eight or nine inch ready-to-bake piecrust, reduced fat.

Preparation
Peel sweet potatoes, slice into medium chunks. Boil for 30-40 minutes until tender.
Drain and place into a medium sized mixing bowl.
Add Splenda® Granular, vanilla extract, nutmeg, Benecol® Spread, Egg Beaters®, flour, and baking powder. Beat with a mixer for 2 to 3 minutes.
Fill the piecrust with the sweet potato mixture.
Bake in a preheated 350° oven 50-60 minutes or until set. Cool approx. 2 hours before serving.
One serving of this recipe contains one serving of Benecol®, a cholesterol lowering margarine.
