Beanpot Special
Level: Easy Cook Time: 2 hours Preparation time - 30 minutes
A hearty, satisfying side dish.

Ingredients
3 medium onions, chopped
2 cloves garlic, minced
2 green bell peppers, seeded and chopped
2 stalks celery, chopped
2 medium zucchini, chopped
2 - 16 ounce cans tomatoes, chopped
1 - 15 1/2 ounce can red kidney beans
1 - 15 1/2 ounce can great northern beans
1 - 15 1/2 ounce can garbanzo beans
1 - 15 1/2 ounce can com
1/2 cup water
1/2 teaspoon chili powder
2 teaspoons dried basil, crushed
1/4 teaspoon black pepper
1 bay leaf
1 teaspoon salt

Preparation
Put the chopped vegetables in a pot. Add the canned items, including all the juices, then add water and the spices.
Bring the mixture to a boil, reduce heat, cover, simmer for 2 hours.
